Healthy cookies and Bounty bites.

A healthy bounty bite, really?

Ok so my video blog last time was about a bake sale, my children kindly put my name down for a bake sale. (The night before the sale)

It was about raising funds for an animal charity that I was happy to help with.

Of course, I am going to make a healthy version because that’s me. The children helped me make cookies, and rock cakes and we did make them sugar-free. I am not sure they sold as well as the sugar laden cakes but we made the effort none the less.

 

Now I am not against cupcakes and sugary treats but I figured with so much press about the effects of sugar and the parents all agreeing I would give the option at least.

The school raised £158.00 in total so it was fantastic.

When we got home I asked the children if they would like to make “Bounty Bites” I ask the children to help because getting them involved in making food that requires only a fridge is safe and easy.

I owe this recipe to a friend, and I changed the recipe he gave me, (SORRY JON) I did keep the coconut though …….

So here they are and by the way, they were a massive hit with everyone that tried them. Actually so much so that three batches made, were eaten by Sunday evening.

No, they are not 100% healthy but they are full of good healthy fat and the best alternative to sugar.

First batch

BOUNTY BARS

200g desiccated coconut

2 tbsp coconut oil melted

1 tbsp date syrup

2 tbsp carob syrup

200 ml dairy-free cream

Mix together and place in the fridge while melting…….

1 bar of green and blacks dark chocolate

We used the very high cocoa content on this batch.

Place the wet mix in a dish, flatten down, spoon over the chocolate and freeze for 20 minutes or when hard.

Cut into bars and serve…..

 

Second Batch

Same coconut amount

Same coconut oil

3 tbsp coconut cream

1 tbsp vanilla extract

2 tbsp stevia

mix again together and leave in the fridge, while melting the dark chocolate of choice.

We used raw chocolate nibs for the second batch and melted them with a handful of dark chocolate nibs.

These ones we rolled into balls and made them bite-sized. Spoon over melted chocolate and freeze, then when hardened place in the fridge.

I prefer the second batch but the children liked both.

Try them and see which ones you prefer.

 

The upside is they are sweet and satisfying and the children didn’t moan at me for always making them eat healthy, when in fact they still were.
