Today I decided to embrace one of my all time favourites, I usually go to London to buy spanakopita, but today as this particular one is my favourite, I thought I should make one. (Or two)

I always change recipes if I can make them healthier:)

If you want your children to eat spinach, this is the way:) My guys loved it. Ok they do love spinach but not as much as I put in this.

Ingredients
500g organic washed spinach
200 g feta (I used organic)
Eight slim spring onions chopped finely
1 garlic clove chopped
2 tsp coconut oil (I use organic)
220g filo pastry sheets (12 sheets roughly)
2tsp Dill ground
1tsp Mint ground
1tsp ground parsley
2 organic free range eggs

Salt (I use Himalayan pink salt)
Pepper

Method
Chop the spring onions and garlic and fry until brown in a pan with coconut oil.

Cook the spinach until soft and drain, to make sure you get all the water out of the spinach you can use a tea towel to ring it out.
If it’s too wet it will seep through the filo pastry.
Add the spinach to the onions and garlic and mix together.
Beat the eggs and feta cheese with the dill and parsley and mint.
combine all ingredients together.
Have a baking tray lined with parchment paper ready.

Brush the filo sheets each time you use with melted coconut oil and a little salt and pepper.
I used two sheets then filling and then two sheets and a little spread of filling again and so on. Layer up.

Cook in a preheated over 180 degrees for 25-30 minutes until golden brown.
