Pack a healthy punch this winter!

How about something that packs a healthy punch this winter?

Fighting against these nasty viruses travelling around!

Something containing lots of Vitamin C, Vitamin K and protein.

Also something containing small amounts of calcium, phosphorous, potassium, thiamin, niacin and carotene.

What can it be?

WINTER SOUP

Yep, we all have been out enjoying the snow, actually the kids woke at 2 am and I sent them back to bed, they got up at just after 5am.

Snow is so exciting in the UK. We are promised it year after year, it either happens as just a covering, or it happens in January.

December snow is amazing.

Face book pictures, The sheer joy of seeing couples, families and dogs having a blast in the snow. Happiness is everywhere.

Hot chocolates and marshmallows, lattes or what ever you usually have, coffee shop stop on the way home is a must after playing all morning in the cold.

We came back and I made a huge pot of……….

Carrot and Coriander soup.

Packed with Vit C and enough other vitamins to kick those viruses out for winter.

Ingredients.

500g Organic Carrots washed and chopped

350g Butter nut squash chopped

1/4 tsp garlic and ginger mix (I used lazy pre-chopped for both)

Pinch Cinamon

Pinch Sage

6 New Potatoes washed and halved

30g Coriander roughly chopped

Bring all the ingredients to boil and then simer until soft, blend and add 1 TBSP goats yoghurt. (Optional)

Serve with crusty gluten free bread torn into slices.

Kids love this as the carrots make it sweet in taste.

Low on the glycemic index, so great for weight control.

My children sprinkled some grated cheese on top 😉

I sprinkled roast almonds on mine.

Ok so I didn’t add protein powder, but you can add 1 scoop if you want to increase your daily intake.

This soup really satisfy’s and helps beat the winter viruses.

Children get a dose of healthy winter in season veg.

What we all call a WIN WIN!

It is a very simple soup and great to enjoy while waiting for the roast to cook.
