Sassy Halloumi Power Bowl
Ingredients
200g halloumi cheese, sliced
1 cup cooked chickpeas
1 cup cooked lentils (green or brown)
2 small cooked beets, sliced
½ red onion, thinly sliced (pickled if you like)
2 tbsp olive oil (plus extra for frying)
Juice of 1 lemon
1 tsp chili flakes (optional)
Fresh parsley, chopped
Salt & pepper
Method
Prepare salad base: In a bowl, mix chickpeas, lentils, beets, onion, parsley, olive oil, lemon juice, salt, and pepper. Toss well.
Grill halloumi: Heat a non-stick pan with a drizzle of olive oil. Fry halloumi slices for 1–2 min per side until golden.
Assemble: Place grilled halloumi on top of the salad. Sprinkle chili flakes and extra parsley.
