Why is it that certain vegetables are winners with children and adults and others are tricky? For example, peas are sweet, and toddlers love to pick them up with their fingers when they are moving onto finger foods, adults they just love the sweetness of peas.

I know the answer!

Ok! I think I have an explanation that’s reasonably logical.

Carrots and peas and broccoli are the three vegetables that toddler will eat right?

Adults will nearly always have at least one of these accompanying an evening meal.

WHY?

Well, peas are sweet as we have already mentioned, carrots also, the sugar content in them both is moderately high, (Effect on blood sugar) meaning the GI. Glycemic index as mentioned in the blog before.

Now, remember this is just a guide. Balance is key so protein and fats with little amount of carbs.

Carrots

In some tests reach 49 on the glycemic index. This is the lower end, but of the high GI, that means it enters into the blood quicker. In effect, you would experience a spike and more so if you have peas within the same meal.

Raw carrots, by the way, are only 16. The above is for cooked carrots.

It’s important to bear in mind that the glycemic index is only one tool used to measure the healthfulness of fruits and vegetables, but it does have a few flaws.

For one thing, the amount of food used for testing purposes doesn’t necessarily correspond to a portion you’d eat in real life.

There’s a related measure called glycemic load or GL, which makes that correction by adjusting the test results to reflect a real-world portion.

The answer?

Well stabilising blood sugar is possible with food combining. Nut butter smeared on an apple slice for example. Apples are also high on the glycemic index when eaten alone.

So it is all about balance.
